He is particularly proud of the coarsely ground Big Dog Royale. This is what smoked and cured sausages would have tasted like in Europe, centuries ago, before mass production changed everything.

We have a restaurant in Galway on the west coast of Ireland & are just about to open a new BBQ beer garden overlooking the sea.
